The distillates intended for the “Imperial Blanc Saint James” are diluted with demineralised water so that the alcohol content is only 40% vol. This makes it suitable for mixing as well as for pure drinking.
The Saint James Rums from the distillery “Saint James” in Sainte Marie, Martinique, are fermented from fresh sugar cane juice. The Saint James Company grows most of the sugar cane required on its own land. During fermentation, which lasts 24 to 36 hours, all the sugar is converted into alcohol and then distilled. This produces cane rum with 75% vol alcohol content, which is then allowed to rest for half a year in stainless steel tanks. During this maturing period, the carbon dioxide and flavours produced during the distillation can escape. In this way the rum gradually acquires its harmonious, pleasant aroma and taste.
It is then stored in oak barrels for at least 2 years.
