Lechuguilla Parejo Cenizo – Juan Fernndez

Experience the unique character of Lechuguilla Parejo Cenizo, a remarkable sotol crafted by 4th-generation maestro vinatero Juan Fernndez in Madera, Chihuahua. This sotol is made from wild maguey Cenizo, which thrives for approximately 15 years in a region known for its coniferous forests, humid summers, and cold, dry winters.

The agaves are traditionally roasted in a pit oven for three days before being crushed with a mechanical shredder. After a 7-day fermentation, the spirit is distilled in a stainless steel alembic still, a detail that contributes to its distinctive flavor profile compared to mezcals from other regions.

Parejo Sotol – The Perfect Spirit

Parejo Sotol is the culmination of over 13 years of dedication by founder Jorge Caldera, who has passionately studied the native spirits of Chihuahua. “Parejo” is the term a vinatero uses to describe a sotol that has reached perfectiona state achieved by carefully adjusting the spirit with spring water until the desired “perlas” (beads) form from the center when passed between cuernos.

Born from a shared struggle among maestros whose craft was once considered taboo, Parejo Sotol aims to recapture the historical taste of sotol. This expression offers a different Cenizo flavor profile, possibly influenced by the use of steel, which is still in contrast to the “viejo,” which is still common in Durango. Despite being glass-rested for three months at 46% ABV, it retains a delightful “pop.”
